Baby Risotto

Makes about two cups

1 tbls lemon infused olive oil or 1tsp lemon rind and 1 tbls olive oil

½ cup millet flakes

1 tbls chia seeds

11/2 cups of veggie stock (some from cooking greens)

½ cup pureed spinach or kale

Method – In a skillet heat the oil, then add the millet. Stir to coat in the oil. Add the chia seeds and stir again. Now, over a medium heat add the stock to the millet one ladle at a time. Continue stirring until most of the liquid has evaporated then add another ladle of stock. Keep doing this until you’ve used all the liquid.  Finally stir through the spinach. Freeze into individual portions.

Note – if using un-flavoured olive oil, add the lemon rind at the end of the cooking process.

 Suitable for children  6 months +
